Sugar Cookies

I love this recipe for sugar cookies because it doesn't require you to refridgerate the dough.

Mix together and set aside:

2 3/4 Cups Flour
1 tsp. baking soda
1/2 tsp. baking powerder
Then, mix until smooth:

1 Cup butter
1 1/2 Cups white sugar

Then add:

1 egg
1 tsp. vanila extract

Mix with the flour mixture, and roll into balls and put them on an ungreased cookie sheet.

Bake at 375 for 8-10 minutes

Frosting:

1 Cup confectioners' sugar

2 tsp milk

2 tsp light corn syrup

1/4 tsp vanila extract

You can serve plain, and it is just as good too!

How to make a Thanksgiving turkey...

My little first graders made a book on how to make a Thanksgiving turkey. Here are some of my favorite. Hopefully this will help those of you who need a little help...or a little laugh!

"I usually don't know because my Grandma does it. She sticks it in the oven until it looks good. The oven should be as hot as it is in July. When it's all doen, and not that hot, she cuts it up." -Amy Conder

" My dad goes hunting and he shoots a turkey. Then he pulls out the eyes and tongue and legs. My mom makes some stuffing and he puts it in the turkey. Then my mom she puts it in the oven for 45 minutes. And then when she gets it out of the oven it is done. Then we eat!" -Kayden Hanks

"Put butter on the skin. Then you put it in the oven. I think you put it in for one minute and it should be just right. Then eat it at a special table. You put food decorations on the turkey." -Rylan Van Komen

Breaded Fried Chicken

Here is a really easy breaded chicken recipe. Casey loved it, and he is picky about his breaded chicken.

Dip the chicken in eggs. Then, dip the chicken in seasoned flour mixture.
Then, dip the chicken back in the egg mixture
Cook in hot oil for about 15 minutes, rotating on each side.

No Bake Cookies

Mix:
2 Cups sugar
1/8 tsp. salt
1/2 Cup milk
3 Tbsp. cocoa
1/2 Cup butter

Bring to a boil for a minute

Add:
3 cups oatmeal
1 Cup coconut
1 tsp. vanila

Mix well Drop in balls on wax paper

Pumpkin Pie

'Tis the season for pumpkin pie!

Ingredients:
1 uncooked pie crust (I just buy the frozen pie crusts)
1 15 oz. can of pumpkin
1/2 Cup sugar
1 tsp. ground cinnamon
1/2 tsp ground ginger
1/4 tsp. ground nutmeg
2 slightly beaten eggs
3/4 Cup half and half, light cream or milk


In medium bowl, combine pumpkin, sugar, cinnamon, ginger and nutmeg. Add eggs, beat lightly.
Gradually add cream and stir until combined.

Pour filling in the pastry shell
Cook at 375 for 45 minutes or more until a knife inserted near the center comes out clean. Cool on a wire rack. Cover and refigerate within 2 hours.

Fudge Jumbles

This is a yummy recipe for you chocolate lovers!

Melt in microwave and set aside:
14 oz. sweetend condensed milk
12 oz. chocolate chips (I like semi-sweet)
2 Tbsp. vanila
6 Tbsp. butter

Mix:
1 cup butter
2 cups sugar
2 1/2 cups flour
1 tsp. salt
1 tsp. vanila
3 cups oatmeal
2 eggs
1 tsp. baking soda

Press 2/3 of oatmeal mixture on a large cookie sheet. Pour chocolate mixture on top.
Drop th rest of the oatmeal mixture on top of the chocolate.

Bake at 350 for 20 minutes.

Anyone interested?

The other day I was watching "Good Things Utah", and they had a segment where a lady was advertising her cookbook with a lot of freezer meal recipes. She was saying that her and about 10 others are in a group where they each make 10 of the same freezer meal, and then pass it around to those in their group, so they come home with 10 different freezer meals. I thought it was a good idea, and I was wondering if anyone was interested in starting a group. Sorry to those who live away from Utah Valley, but those around here, are you interested?

Chicken Cordon Bleu...sort of

Casey loves Chicken Cordon Bleu, but it can be such a pain to make, I rarely make it. I found this really easy recipe that tastes just like Chicken Cordon Bleu.

1 loaf of bread (I got the Rhodes white bread loafs in the freezer section)
8 oz Ham deli meat
1/2 cup swiss cheese
5 oz chicken deli meat

1. Roll out the bread dough until it is about 10 inches by 8 inches.
2. Spread butter all over the dough
3. Lay out the Ham, then the swiss cheese and then the chicken on top of the bread.
4. Roll up the dough starting at the long edge.
5. Lay it out on a cookie sheet, with the seam down.
6. Let dough rise for 20 minutes
7. Cook at 350 degrees for 25-30 minutes.

Philly Steak Wraps

I made these today, and they tasted SO GOOD, I had to post the recipe. 3 beef bouillon cubes
1/2 cup water
3 garlic cloves pressed
1/8 tsp ground black pepper
1 bonesless beef top sirloin steak, cut 1 inch thick (1 lb)
1 small greed bell pepper, cut into 1/4 inch strips
2 cups shreeded mozzarella cheese
4 10-inch flour tortillas

1. Combine bouillon cubes, water, garlic and black peppers in bowl. Place marinade and steak in plastic bag and refrigerate for 1-3 hours
2. When ready to serve, cut bell pepper into 1/4 inch strips. Remove steak from marinade and heat on medium high heat for 6-8 minutes or until steak is medium rare, turning once.
3. Return pan to medium high heat. Lightly spray pan with vegetable oil. Add bell pepper and cook for 5-7 minutes until vegetables are crisp, turning occasionally.
4. Cut steak crosswise into thin slices. For each wrap spinkle 1/2 cup mozzarella cheese over tortilla. Place one fourth of the steak and peppers in the center. Roll up tightly. Repeat with remaining tortillas.
5. Heat pan over medium high heat until hot. Place wraps, seam side down in pan. Spray tops of wraps lightly with vegetable oil. Cook 2-3 minutes on each side or until grill marks appear deep golden brown. Remove wraps to cutting board; cut each wrap diagonally in half.

The best dough ever!

This is the best recipe for bread, pizza, dinner braids, rolls you name it. It is also very easy and you don't have to have it rise as long as other recipes.

Makes 2 loaves:
5 1/2 cups white unbleached bread flour
1/4 cup sugar
1/2 Tbsp salt
1 1/2 tbsp yeast
2 tbsp liquid lecitin (you can get it at any kitchen store), or 1/2 cup veggi oil
2 cups hot tap water

Mix dry ingredients. Add lecithin and water and mix for 5-10 minutes. Spray counter and pans with Pam. For bread and rolls, shape the dough, then have it rise for 25-45 minutes.
***For Pizza dough, I like to make mine a cheesy crust by getting string cheese and lining the edge of the pizza, then covering it with dough.

Tricolor Pasta Salad

Since it is summer, we have BBQ's all the time, and this is a salad that I like to make. This is a quick and easy recipe, and it tastes delicious!

1 package (16 oz) of tricolor pasta salad
1 package (16 oz) frozen California Blend veggi's (broccoli, cauliflower, carrots)
1 can of sliced olives
1 1/3 cup Italian salad dressing
1/2 teaspoon garlic salt

Cook the pasta, meanwhile, cook the veggi's in the microwave for 7-8 minutes. Drain pasta and mix with veggi's and olives. Combine salad dressing and garlic salt. Pour over salad and toss to coat. Refrigerate until serving.

I'm a little behind...

I had completely forgotten about this blog until today, and as I was reading through it, I saw that everyone was introducing themselves...so I'm a little behind, but here it is. My name is Brynn and I have been married to Casey Losee for 3 years. We just had our first baby, Gavin, on April 17th. I just graduated from UVSC and have spent the last year doing an internship teaching 1st grade at Westfield Elementary in Alpine. I usually like to cook, but this past year doing the internship, and being pregnant, it was really hard to want to get into the kitchen to try out new things. Now that I am home all day, I'm excited to try out all these new dishes.
