Hump Day Dinner

Last night I realized that I really don't look forward to Wednesday very often. I thought it might be kind of fun for us to post Hump Day Dinners every Wednesday morning. Of course, nobody is obligated to make the dinner when it's posted, and I don't know about all of you, but by Wednesday night I get a little stumped about what to serve for dinner. I thought I'd give it a try this week...

Easy Navajo Tacos

(Makes 4 pieces of fry bread)

1 c. all-purpose flour
2 t. baking powder
1/2 t. salt
1/2 c. warm water
Vegetable oil
1 lb. meat (chicken, ground beef, steak, etc.)
1 pkg. taco seasoning
Taco toppings: tomatoes, onions, lettuce, cheese, sour cream, etc.
1. Mix flour, baking powder, and salt in a medium bowl with a whisk.Add water slowly while mixing the dough with your hands. When the dough is sticky enough to roll into a smooth ball it is just right.If it seems too sticky add a little flour, if it seems too tough add a little water.

2. Roll dough into four round pieces. Take one piece of dough at a time and slowly flatten it, keeping the round shape. Gently place in a frying pan of warm oil. (YES, I'm including pictures on how to fry something in oil because until a little while ago I had no idea what it meant to put something into "melted oil." You know you have the temperature of the oil just right when little bubbles surround the dough).Turn after 2-3 minutes so it is browned lightly on both sides.Place cooked fry bread on a plate covered in paper towels. Separate each piece with a paper towel in between. (The great thing about the fry bread is that it stays warm for a long time...giving you a chance to finish gathering toppings and cooking meat).

3. In a separate pan prepare meat (cut chicken or steak into pieces first). Cook through (about 5-10 minutes). Add taco seasoning as directed on package.

4. Serve fry bread topped with seasoned meat and your choice of toppings.

Sorry there's no picture of the finished product because 1) my dishes are hideous, and 2) the only topping we had in our cupboards and fridge was cheese...it didn't look as good as it tasted.

I love these! But, unfortunatly Kurt won't touch them. So, they're my special treat on nights he's fishing. But I love that you have a dough recipe, I've been using Rhode's rolls dough.

Yummm... those look good, Skip. I love the idea of hump day recipes. I'll do next weeks :)

That sounds great! Mmmmm Navajo Tacos, I've never done those before. I bet Jarom would LOVE them. Thanks for the great idea!
