We always do cheese fondue for Christmas Eve dinner and caramel for dessert. It's one of my favorite parts of the holiday. I don't have t he cheese fondue recipe on hand, but the caramel is very simple. Just take a can of sweetened condensed milk and boil it for 3-4 hours adding water every once in a while because it evaporates. Then, just open the can and viola... caramel! It's magic. :) We serve it with bananas, apples and sandies. It's yummy!
My favorite Christmas Eve dinner tradition is baked ham with some sort of potato dish and 3-layer yule salad. Here's the recipe:
1 lg pkg each red and lime jello 1 sm pkg lemon jello 6 oz cream cheese 1/2 c mayo 1 c cool whip 1 c crushed pineapple, drained 1 c mini marshmallows
Make lime jello and pour into 9x13 pan. Chill until set.
Dissolve lemon jello in 1 cup boiling water. Add cream cheese and blend. Chill until wiggly. Blend mayo, cool whip, & pineapple and add to cream cheese mixture. Fold in marshmallows. Spoon over set lime jello. Chill until firm.
Make red jello. Pour on top of lemon layer. Refrigerate until red layer is set. Serve.
This is my absolute favorite and we have to have it every year.

This is a total cop-out but we always go out for Chinese food on Christmas Eve. It's great food and no hassle. (sorry, that didn't help you at all)
